Baked/Steamed Halibut and Vegetables in StJohns Newfoundland


On the plane ride across to newfoundland (5hrs) I was watching aussie tv chef Curtis Stone on his US program "Take Home Chef". In this show he meets someone in the supermarket, shops for them and then goes home and cooks them a three course.
So one of the menus (episode 104) took my fancy and we decided to cook it tonight. For our lovely host (Tara) and ourselves. I was convinced by Kelly to limit it to the main course only as doing three courses never before attempted when cooking for a host I had never met before was a tad ambitious.
The meal was fantastic! It was pretty quick, healthy and simple. I will surely make it again.
Thumbs up all round. We paired it with Dry and Dry cocktails (Dry Vermouth and Dry Ginger with two sticks of cucumber with ice in a tall glass. - thanks to Lucy Draffin for that one) as we had to purchase a large bottle of Vermouth, when only using 4 tea spoons for the dish.

Fall is lovely! (if not a bit snowy in Banff)

We participated in snap shot city on Saturday. It was quite incredible to wake up to snow everywhere!!! All these photos below are of Saturday 29 Sept as we walked around town and took photos for the treasure hunt..

My friend Erin and I went for a bike ride around the Spray River Loop the other day.. Check out those colours!


These are shots from a hike we did the other day to Arnica Lake. We started off normal looking conditions but by the time we'd got up high we were walking through snow with all the fall colours around us.. It was an autumn/winter wonderland!!
